Two little classics that lift any dinner: a crisp, sun-ripened tomato salad and warm, airy focaccia bread. Serve them together – and watch the table come alive.
Crisp, juicy and creamy – a guaranteed favourite alongside warm bread.
Ingredients:
600 g ripe tomatoes (mixed cherry tomatoes work well)
1 ball burrata (approx. 125 g) – or good mozzarella
2 tbsp extra virgin olive oil
1 tsp finely grated lemon zest + 1 tbsp lemon juice
½ tsp freshly ground black pepper (plenty)
½ tsp flaky salt
A small handful of fresh basil leaves
Method:
Prepare the tomatoes: Cut tomatoes into chunks and place on a flat dish.
Pepper oil: Mix olive oil, lemon zest, lemon juice and black pepper.
Assemble: Tear burrata into large pieces over the tomatoes. Drizzle with pepper oil and sprinkle with flaky salt.
Top & serve: Finish with basil. Serve immediately – ideally with warm focaccia.
Tip: For extra bite, add thin slices of red onion or a few capers.
Airy, golden and easy to make – perfect with salads, soups and cosy autumn meals.

Ingredients
25 g fresh yeast
3 dl lukewarm water
1 tbsp olive oil (plus extra for brushing)
1 tsp coarse salt
Approx. 500 g wheat flour
2–3 sprigs fresh rosemary
Flaky salt or coarse sea salt for sprinkling
Topping: fresh rosemary • flaky salt • olive oil
Method
Dough: Dissolve yeast in lukewarm water. Add olive oil and salt.
Flour & kneading: Add flour gradually and knead until smooth and elastic (approx. 5–7 min).
First rise: Cover and let rise for about 1 hr until doubled.
Shaping: Transfer dough to a tray lined with baking paper. Press it out with your fingertips – uneven surface is fine.
Topping: Drizzle generously with olive oil. Press rosemary sprigs into the dough and sprinkle with flaky salt.
Second rise: Let rest for 20–30 min.
Bake: Bake at 220°C (regular oven) for 20–25 min until golden and crisp.
Flavour idea: Top with cherry tomatoes, olives or onion rings before baking for extra colour and taste.
Focaccia can also be made with a cold rise. This develops deeper flavour, and you can prepare the dough the day before – perfect if you want freshly baked bread without stress.
A soft and airy version, where time in the fridge develops both flavour and structure.

3 dl lukewarm water
1 tbsp olive oil (plus extra for brushing)
1 tsp coarse salt
Approx. 500 g wheat flour
2–3 sprigs fresh rosemary

Method
Dough: Dissolve yeast in water, add olive oil and salt, then knead in flour until smooth and elastic (approx. 5–7 min).
First rise: Let rest in an oiled bowl, covered, at room temp for about 2 hrs.
Cold rise: Place bowl in fridge and let dough rise for at least 12 hrs – up to 24 hrs for more flavour.
Shaping: Take dough out 1–3 hrs before baking to reach room temp. Transfer to tray with baking paper, press out with oiled fingers.
Topping: Drizzle with olive oil, add rosemary, sprinkle with salt.
Second rise: Let rise for about 1 hr at room temp.
Bake: Bake in preheated oven at 220°C for 20–25 min until crisp and golden.
